I kept hearing so much about portobello mushrooms I thought I need to give them a try! So I came up with a recipe that includes nutritious spinach, super easy, and tastes amazing! Another great way to get dark leafy greens in your diet 🙂

Ingredients:
- 2 Portobello Mushrooms
- 1/2 Cup chopped onion
- 2 Garlic cloves
- 3 Handfuls of spinach
- 1/2 Can fire roasted tomatoes
- Melted ghee
- Sea Salt

Instructions:
- Preheat oven to 375 degrees F
- Rinse mushrooms
- Cut stem out of mushrooms
- Brush both sides of mushrooms with Melted ghee butter
- Place in a baking dish inside up
.
In a skillet:
- Chop and saute the following for 7-10 minutes on medium low in ghee butter
- Onion
- Garlic
- Spinach
- Fire roasted tomatoes
- Salt to taste

Last Step:
Fill mushrooms with sauteed veggies
Bake for 20 minutes
Serve and enjoy!
