I personally don’t eat many leafy green salads for 3 reasons:

1. It’s time consuming to clean and cut up all those leafy greens.

2. It’s nearly impossible to consume the amount of leafy greens you really need to get the nutrients you need. And most people do not chew greens to liquid like we are supposed to. So they don’t digest them anyway. I juice my greens.

3. They are not very sustaining or satisfying. I find myself hungry again an hour later!

This salad is quick, simple, healthy, and satisfying!


Cucumber, Tomato, Avocado Salad Recipe

Ingredients:

1 small avocado (cut in small pieces)

15-20 grape tomatoes (cut in half)

1/2 cucumber (cut into small pieces)

1/4 small red onion (sliced)

1 Tbsp Raw Apple Cider Vinegar

2 Tbsp “Bullet Proof” MCT oil (I strongly recommend Bullet Proof brand. Other brands just do not seem to be worth it.)

1/8-1/4 tsp unrefined sea salt

Instructions:

Combine all the ingredients in a large bowl, mix and enjoy 🙂
